Ingredients:
1 cup oats
1 cup whole-wheat flour
1 cup Plant Fusion chocolate protein powder (May use other vegan protein powder of choice).
½ tsp. salt
½ tsp. baking soda
½ cup peanut butter
¼ cup agave
1/3 cup apple sauce
1 tsp. vanilla
3 smashed bananas
1 cup coconut
½ cup carob chips
½ cup pecans
¼ cup sunflower seeds
¼ cup pumpkin seeds
¼ cup dried fruit of choice
Directions:
Preheat oven to 350 degrees Fahrenheit.
Stir together oats, flour, protein powder, salt, and baking soda; set aside.
Blend peanut butter, agave, applesauce, and vanilla; stir in the smashed bananas.
Mix wet ingredients into dry.
Mix in all remaining ingredi9ents. Drop batter into greased muffin pan.
Bake approximately 20 minutes, till edges are turning brown. Cool completely before turning out
Yields about 16 muffins
Yes! Thank you! I just destroyed a couple of recipes trying to change them from regular muffins to protein muffins. I feel so much better about the fact that this is a real recipe.
Is that coconut shreds or coconut oil?
I am going to assume it is shreds, that would be a lot of oil! 🙂
I made them a few times using shreds and it worked awesome.
