This little creation is something I stumbled on when I saw berries, peanut butter and protein powder as items for one of the meals on my meal plan. I have a Ninja blender and a small food processor, and I recently got into making my own oil free “peanut cream” by blending peanuts, a little almond milk and sometimes sweetening with agave. I also make banana “ice cream,” so I had a feeling I could throw these ingredients into the food processor and come up with some type of mousse or pudding that could also be frozen into ice cream.
The exact proportions are:
1 cup berries
2 tbsp nut butter of your choice
1 scoop protein powder of your choice
1/8-1/4 cup non-dairy milk (optional but will be VERY thick without it)
My first try included strawberries, peanut butter and vanilla spiced chai Raw Protein, and it really reminded me of a pb & j sandwich. Raspberries and blackberries are also great as the stand alone fruit, but there will be lots of seeds unless you use a Vitamix (I prefer to blend these in the small food processor just because it’s easier to pour out and clean.) Although I haven’t tried them yet, blueberries or even cherries should work well.
If you are ready to be adventurous and go for my “trifecta,” use ½ cup strawberries, ½ cup blackberries and a scoop of chocolate raspberry Plant Fusion. You can also experiment with different amounts of non dairy milk and refrigerated versus frozen.
